Coconut Curry Noodle Bowl

INGREDIENTS : 1 cup Coconut cream or coconut milk ½ cup Chicken or Vegetable Broth or water 2 tsp. Eastern Blue Red Curry Paste ½ Onion, diced 1 Medium Carrot ( Julienned ) ¼ cup Broccoli, chopped ½ Red Pepper, diced Noodle (of your choice) INSTRUCTIONS :

  1. Set the pot over medium-high temperature and heat the oil.

  2. Add diced onions, julienned carrot, chopped broccoli, and your favorite vegetables, and fry for 5 minutes turning frequently.

  3. Using a saucepan; cook noodles (any of your choice) according to the given instructions.

  4. Make coconut curry soup by mixing 1 cup of coconut cream with 2tsp of red curry paste and ½ cup water . Bring it to a boil and then reduce to simmer.

  5. When the noodles are done,then add noodles and vegetables to the coconut curry soup.

  6. Garnish with sesame seeds, cashew nuts and a wedge of Lime and serve.

Tip: Add more coconut milk ( if needed )
